I am looking for information of how the dielectric constant varies over frequency for the plastic PEEK natural (no filling material) (PolyEtherEtherKetone).

I don't know about frequency variation, but I dug up two numbers:

DK=3.5
DF=0.004

There might be some threads to pull on wikipedia:

The measured dielectric constant at room temperature (23C) is 3.27 and is reasonably constant from 100Hz to 100MHz
The dielectric constant varies with temperature and also with annealing so be careful
